Ever have one of those days where things just don't seem to go the way you want them to? Well, that was our day. Today, Vi and I decided it was time to try making a new fruit jelly. The juice we were using was sweet on it's own, so we decided less sugar was in order. 2 different attempts at it failed. The jelly would not gel, Vi spilled some of it down her pants and onto her shoes, which trickled onto the floor. So now my floor sticks to the shoes (or is it the other way around?) and it makes that horrible smacking sound. You know, the one that says "Mop me once, that's just a lick, mop me twice, and I might not stick". Ugh!

We decided that we had found out how to not make this jelly. Instead, we have learned how to make a very flavorful syrup. And Vi got to take over a gallon of this learning adventure home with her. Pancakes anyone??
So, we now know that we have to go to a low sugar pectin.....we think. We'll find out tomorrow! What's the quote? If at first you don't succeed, try, try again.
